Easy apple muffins with cream cheese frosting
175g plain flour
75g wholemeal flour
1 teaspoon bicarbonate of soda
1½ teaspoons cream of tartar
2 teaspoons cinnamon
75g caster sugar
2 eggs
175ml sunflower oil
2 apples, grated
40g sultanas
50g unsalted
butter
65g cream cheese
½ teaspoon cinnamon
350g icing sugar
Preheat oven to 170°C / 150°C fan / gas mark 3. Line a 12-hole muffin tin or 24 mini muffin tin with cases. In a large bowl, mix the flours, bicarbonate of soda, cream of tartar, sugar and cinnamon.
In a separate bowl, mix the eggs and oil, pour into dry ingredients and stir to combine. Add the apples and sultanas and mix in.
Divide the mixture equally between muffin cases and bake for 20–25 minutes, until a skewer comes out clean.
Remove from oven and cool.
For the optional cream cheese topping, cream together the butter and cream cheese, add in the cinnamon and icing sugar and beat until smooth. Spread on top of muffins.
Serving sizes are based on adult portions.

Young child (age 5-9): ½ (½ muffin)
Older child (age 10-13): ¾ (¾ muffin)

We would advise speaking with your dietitian prior to increasing the serving size if your child has struggled to manage potassium or phosphate.
Flour and sugar are the main sources of carbohydrate, and the value has been provided for those trained in insulin adjustment.
Even though this recipe uses some high potassium ingredients, like sultanas, it is still low in potassium if you follow the ingredient amounts and serving sizes. It is also low in phosphate, but still contains some from the flour, so if you have been prescribed a phosphate binder, take as directed.

Once cooked and cooled, the muffins can be stored in an airtight container for 4 days (without the topping) or in the fridge in an airtight container (with the topping) for 3 days.
If you want to lower the potassium in the recipe even more, leave out the sultanas. And to further reduce phosphate, as well as calories, skip the cream cheese topping.
