Ingredients

1 tablespoon vegetable oil

1 small onion, finely chopped

2 servings (230g) basic red curry sauce (see Kidney Kitchen’s basic red curry sauce recipe)

100g paneer, cut into cubes

120g frozen green peas

20g fresh coriander leaves, chopped

1 teaspoon kasuri methi (dried fenugreek leaves), chopped

To serve

4 medium-sized wholemeal chapattis or

2 wholemeal tortilla wraps

Method

  1. Step 1

    Heat the vegetable oil in a frying pan. Once the oil is hot, add the onion and sauté until cooked, roughly 10 to 12 minutes.

  2. Step 2

    Carefully pour 2 portions of the prepared red curry sauce into the pan and stir through, keeping the pan on a medium heat.

  3. Step 3

    Add the paneer cubes, stir, then add the green peas, stirring again.

  4. Step 4

    To adjust the curry sauce’s consistency, add 2 to 3 tablespoons of water, until the sauce is the desired consistency. Sprinkle over the coriander and kasuri methi and mix well.

  5. Step 5

    Let the mixture boil for a minute, then take the pan off the heat.

  6. Step 6

    Serve warm with the wholemeal chapattis or tortilla wraps.

Chapattis are the main source of carbohydrate in this recipe. The value has been provided if you have been trained in insulin adjustment.

This recipe is low in potassium, when following quantities and serving sizes given, so is suitable if you have been advised to reduce the amount of potassium in your diet. This recipe is also low in phosphate; however, does contain some phosphate, mainly provided by the paneer. If you have been prescribed a phosphate binder, take as directed.

This recipe provides a good vegetarian source of protein. If you have been advised to eat less protein, consider reducing the quantity of paneer.

Kasuri methi gives this dish an authentic flavour, but if you do not have it, add more fresh coriander.

Once cooled, the dish will keep in an airtight container in the fridge for two days. Reheat thoroughly.
