Yam potage with crispy turkey wings

This yam potage with crispy turkey wings is a tasty and high protein meal. Try using one or two scotch bonnets instead of red chilli to give it that extra kick.

Ingredients

Yam potage

1 yam (400g), cut in half lengthwise. Cut 1 half into small chunks, the other half into semi-circle slices

3 red peppers, deseeded and roughly chopped

1 tomato, deseeded and roughly chopped

1 red chilli

1 onion, halved; 1 half sliced and 1 half roughly chopped

300ml water

60ml palm oil

30g dried, ground crayfish, or white fish cooked and mashed

1 zero-salt chicken stock cube, crumbled

Wings

800g turkey (or chicken) wings

ยฝ teaspoon cumin

1 teaspoon paprika

2 teaspoons garlic powder

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon black pepper

1 teaspoon cayenne

2 tablespoons olive oil

Method

  1. Step 1

    Heat oven to 200ยฐC / 180ยฐC fan / gas mark 6. Pat the wings with kitchen paper, until dry. Add the remaining wings ingredients into a bowl and whisk together. Rub the mix over the wings. Line a baking sheet with foil and place a rack on top of the baking tray. Place the wings onto the rack and cook in the oven for about 1 hour, until crispy.

  2. Step 2

    While the wings are cooking, bring a pan of water to the boil, add all the chopped yam and cook until softened. Drain and rinse (This helps remove potassium from the yam).

  3. Step 3

    Put the peppers, tomato, chilli and half a chopped onion into a blender and roughly chop, to retain a coarse texture. Heat palm oil in a large saucepan, on a low heat for 4-5 minutes. Add blended pepper mix, sliced onion and ground crayfish. Cook for 10 minutes, until the pepper is cooked.

  4. Step 4

    Add all the yam with 300ml of water and stock cube. Cook over a low heat until cooked, about 20 minutes. Remove some bigger pieces of yam and mash the rest. Add bigger pieces back in for a little texture.

  5. Step 5

    Once the wings are cooked, remove from the oven and serve with the yam potage.

Yam is the main source of carbohydrate and the value has been provided for those trained in insulin adjustment.

This recipe is low in potassium, when following quantities and serving sizes given, so is suitable if you have been advised to reduce the amount of potassium in your diet. Th is dish will be high in potassium if the yam is not boiled and drained, so ensure you cook the yam as described. Th is recipe is also low in phosphate, but does contain some, mainly provided by the turkey/chicken wings, so if you have been prescribed a phosphate binder, take as directed.

This recipe is high in protein, and suitable for those advised to eat more protein.

To reduce saturated fat, replace the palm oil with olive oil.

This recipe is best eaten freshly made.

Make sure all raw vegetables are washed before cooking and that the turkey or chicken wings are well cooked to avoid infection risks.
